Delicious Pea and Ham Soup

    Thick, hearty pea and ham soup is just perfect in winter. It's especially good served with warm toasted rye bread.

    Serves: 6 

    • 2 litres chicken stock
    • 1 cup split peas, rinsed
    • 100g ham, diced
    • 1 onion, diced
    • 1 carrot, diced
    • 2 tablespoons butter
    • 3 small potatoes, diced
    • 2 cloves garlic, diced
    • 1 bay leaf
    • salt and pepper, to taste

    1. Bring the stock to a simmer. Add the split peas, cover and cook 1 hour over low heat.
    2. Meanwhile, in a frying pan, fry the ham until browned. In a separate frying pan, fry the onions and carrots in butter until soft.
    3. When the peas are soft, add ham, browned vegetables and potatoes. Add garlic, bay leaf, salt and pepper. Simmer 20 minutes, or until potatoes are cooked. Serve.
