One Bowl Coffee and Walnut Cake

    One bowl coffee and walnut cake. Beat everything together in one bowl, pour into tin and cook. Nice and easy and totally yummy.

    Makes: 1 cake

    • Cake
    • 1 tablespoon instant coffee
    • 1 tablespoon hot water
    • 1 1/2 cups self raising flour
    • 1 cup sugar
    • 2 eggs
    • 1/2 cup canola oil
    • 1/2 cup milk
    • 1/4 cup crushed walnuts
    • Icing
    • 1 tablespoon instant coffee
    • 1 tablespoon hot water
    • 2 cups icing sugar
    • 1 tablespoon butter
    • milk, as needed

    Preparation:15min  ›  Cook:45min  ›  Ready in:1hour 

    1. Preheat oven to 180 degrees C. Grease and flour a Bundt tin, or grease and line bottom of a round or square tin.
    2. Dissolve coffee in hot water.
    3. Combine all ingredients except crushed walnuts into a medium bowl and beat well with an electric mixer.
    4. Stir in walnuts, then pour batter in prepared tin.
    5. Bake for 35 - 45 minutes (depending on tin) or until a skewer comes out clean. Cool completely.
    6. Icing:

    7. Dissolve coffee in hot water and mix everything together, adding milk a little at a time until you have a spreadable icing.
    8. Spread over cake and sprinkle with more walnuts.
