A great mixed vegetable soup with cabbage, kohlrabi, cauliflower, broccoli, beans, carrots... you name it!


Serves: 8 

  • 1 onion, quartered
  • 3 carrots, sliced
  • 1/2 celery root (celeraic), diced
  • 2 beetroot, diced
  • 1 cup green beans, sliced
  • 3-4 dried mushrooms
  • 1 tablespoon stock powder
  • 2 kohlrabi or turnips, diced
  • 1/4 cabbage, sliced
  • 1/4 cauliflower, cut into florets
  • 1/4 head broccoli, cut into florets
  • 1/4 cup light thickened cream
  • salt and pepper, to taste

  1. In a large saucepan, combine onion, carrots, celeraic, beets, beans and mushrooms. Add water to cover the vegetables, add stock powder and bring to a boil. Reduce heat and simmer 15 minutes.
  2. Add kohlrabi and cabbage and cook another 10 minutes. Add cauliflower and broccoli and simmer 5 minutes.
  3. In a small bowl, combine a few tablespoons of hot soup with the cream and stir. Pour back into the soup and simmer 2 minutes. Season and serve.
