Simple Onion Soup

    A simple and inexpensive soup, great for winter. Use your favourite kind of cheese and serve with crusty bread for dipping.

    Serves: 4 

    • 40g butter
    • 400g onions, sliced
    • 40g flour
    • 4 cups (1 litre) water
    • 2 stock cubes
    • 1 small wedge herb cheese
    • 3 tablespoons dry white wine
    • 3 tablespoons sour cream
    • 2 teaspoons dried marjoram
    • 2 tablespoons fresh parsley, finely chopped

    1. Melt the butter in a saucepan and fry onions until golden brown. Add flour and cook briefly.
    2. Add water and stock cubes then simmer until onions have softened. Add the cheese and let melt through the soup.
    3. Add wine, cream and marjoram and simmer. Serve topped with chopped parsley.
