Cauliflower Soup with Fresh Herbs

    Cauliflower, thyme, parsley and blue cheese are a perfect combination. This is a perfect rich soup!

    Serves: 4 

    • 1 tablespoon butter
    • 1 onion, finely diced
    • 400g cauliflower, cut into florets
    • 600ml chicken or beef stock
    • 1 sprig thyme
    • 1 sprig parsley
    • 1 tablespoon cornflour
    • 200ml milk
    • 100g blue cheese, such as Stilton
    • salt and pepper, to taste
    • 3 tablespoons parsley, chopped

    1. In a saucepan over high heat melt the butter then add onion. Saute until softened. Add cauliflower, stock, thyme and parsley then bring to a simmer. Simmer 15 minutes, stirring occasionally.
    2. Remove parsley and thyme and puree the soup in a blender. Return soup to the saucepan.
    3. In a cup, mix together the cornflour and milk. Stir into the soup and simmer for a few minutes. Remove from heat and add the blue cheese. Season to taste and serve, garnished with parsley.
