Pressure cookers are a wonderful option to make stews and casseroles in a fraction of the time. This is a wonderful recipe for chicken and pumpkin stew.

Ingredients
Serves: 8
- 50g butter
- 2 cloves garlic, minced
- 1 onion, diced
- 1 kg chicken breast, cubed
- 1 1/2 kg pumpkin, peeled and diced
- 2 chicken stock cubes
- 1 cup tomato pasta sauce
- 1 cup cottage cheese
- parsley, to taste
- chives, to taste

- In the pressure cooker, place the butter, garlic and onion. Saute.
- Add to the pressure cooker some of the chicken pieces (reserve the rest), the diced pumpkin and chicken stock then pressure cook for 15 minutes.
- Once cooked, beat until creamy. Add the remaining chicken breast and the tomato pasta sauce. Pressure cook for 10 minutes.
- Finally add the cottage cheese and if desired the parsley and chives. Serve with white rice.
