Potato and Cabbage Soup

Cabbage soup is a hearty and healthy treat for cold weather. I like to add some slices of cooked chorizo or other kind of sausage.


Serves: 4 

  • dash olive oil
  • 3 cloves garlic, sliced
  • 1 small white onion, sliced
  • 3 potatoes, peeled and cubed
  • 4 cups (1 litre) vegetable stock
  • 1/2 cabbage, cut into thin strips
  • 1 carrot, sliced
  • 1 red chilli, sliced
  • slices of chorizo sausage, to garnish (optional)

Preparation:15min  ›  Cook:25min  ›  Ready in:40min 

  1. Heat a little oil in a heavy saucepan and fry garlic, onion and potatoes until softened.
  2. Add the stock. Bring to a simmer, then add cabbage, carrot and chilli. Simmer 15 minutes over low heat.
  3. Puree the soup with a hand blander. Add the chorizo slices just to warm through and serve.
