Banana and Caramel Surprise Muffins

    Yummy banana muffins with a hidden surprise. When you take a bite you get hit with a gooey caramel centre.

    Makes: 18 muffins

    • 2 1/2 cups self raising flour
    • 1 cup brown sugar, packed
    • pinch salt
    • 1/2 cup canola oil
    • 1/2 cup milk
    • 2 eggs
    • 3 large bananas, mashed
    • 1 can caramel Top 'n Fill (TM)
    • icing sugar, for dusting
    • banana chips, to serve

    1. Preheat oven to 180 degrees C. Line muffin tins with large paper patty pans.
    2. In a large bowl with an electric mixer, beat the flour, sugar, salt, oil, milk and eggs together until well combined.
    3. Beat in mashed bananas. Half fill each patty pan with mix.
    4. Place a teaspoon of Top 'n Fill in the centre of each muffin. Cover caramel with more batter until each patty pan is 3/4 full.
    5. Bake for approximately 20 minutes or until a skewer comes out clean.
    6. Cool completely. Dust with icing sugar and top with banana chips.
