This is a lovely chicken and pasta broth that is good to serve on a Monday night with Sunday's leftover chook. Kids love it.


Serves: 6 

  • 1 small knob butter
  • leftover chicken, diced
  • 1 chicken stock cube
  • 2 carrots, peeled and sliced
  • 2 cloves garlic, minced
  • 7-8 cups water
  • salt and freshly ground pepper, to taste
  • 100g small pasta shapes
  • grated cheese, to serve

Preparation:10min  ›  Cook:25min  ›  Ready in:35min 

  1. In a saucepan, melt the butter and saute the chicken until a little browned.
  2. Add the crumbled stock cube, carrots and garlic then saute 2-3 minutes, stirring.
  3. Add water, salt and pepper to taste then simmer 15 minutes, or until carrots are just tender.
  4. Add the pasta shapes and simmer 10 more minutes or until pasta is done. Serve hot with grated cheese.
