A different gazpacho in that it uses watermelon and grenadine for colour and sweetness. Serve in glasses as a summer entree.


Serves: 6 

  • 1/4 watermelon
  • 1/2 red capsicum, diced
  • 2 tomatoes, diced
  • 1/2 onion, diced
  • 2 tablespoons olive oil
  • 1 cup tomato juice
  • 2 drops grenadine, optional
  • salt and freshly ground pepper, to taste

  1. Seed the watermelon and place in a blender with the capsicum, tomatoes, onion, olive oil and tomato juice. If you like, add grenadine for a brighter colour. Blend to a puree then season with salt and pepper.
  2. Chill two hours and serve.
