1/2 red capsicum, diced
2 tomatoes, diced
1/2 onion, diced
2 tablespoons olive oil
1 cup tomato juice
2 drops grenadine, optional
salt and freshly ground pepper, to taste

Seed the watermelon and place in a blender with the capsicum, tomatoes, onion, olive oil and tomato juice. If you like, add grenadine for a brighter colour. Blend to a puree then season with salt and pepper.
