    This pumpkin cake has a beautiful colour and the spices make it a perfect cake for fall. You can use any type of pumpkin including butternut if you prefer.

    Makes: 1 cake

    • 1 cup yoghurt
    • 3/4 cup oil
    • 3 eggs
    • 1 cup pureed pumpkin
    • 1 1/2 cup sugar
    • 3 1/2 cups flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon ground cinnamon
    • 1 pinch grated nutmeg
    • 1 pinch cardamom

    1. Preheat oven to 180 degrees C. Prepare a loaf tin with butter.
    2. Pour the wet ingredients into a bowl (yogurt, oil, eggs, pumpkin) and mix until completely smooth. Add the dry ingredients (sugar, flour, baking powder, cinnamon, nutmeg and cardamom) and mix well.
    3. Pour the batter into the prepared loaf tin and bake for 35 to 40 minutes. Test the cake with a toothpick, when cooked it should come out clean and dry.
