The pumpkin is the queen of autumn. This recipe is ideal for a tasty breakfast or a tasty snack. It works great as a cute mini muffin style.


Makes: 12 muffins

  • 150g flour
  • 1 teaspoon baking powder
  • 250ml pureed pumpkin
  • 80ml vegetable oil
  • 2 eggs
  • 200g sugar
  • 1 teaspoon cinnamon
  • pinch salt, to taste

  1. Prepare the pumpkin puree by steaming the pumpkin. Once cooked, peel and blend it until it is a puree. Allow to cool.
  2. In a bowl combine the flour, baking powder and salt.
  3. In a second bowl, combine the pumpkin puree, eggs, oil, cinnamon and sugar. Stir until mixture is smooth.
  4. Add the flour mixture and stir until the mixture is well combined, it is a fairly runny batter.
  5. Pour the batter into a muffin tray. Bake at 180 degrees C for about 15 minutes.
  6. Check the cooking by inserting a toothpick, once it comes out clean the muffins are cooked. Cool then serve.
