Easy Onion Soup

    A classic and economical dish I never get tired of. Another nice idea is to rub each baguette slice with a clove of garlic before grilling.

    Serves: 4 

    • 9 medium onions, thinly sliced
    • 40g butter
    • 20g flour
    • 5 cups (1 1/4 litres) vegetable or beef stock, hot
    • 1 bay leaf
    • salt and freshly ground pepper, to taste
    • 8 slices baguette
    • 40g grated cheese

    1. In a saucepan, combine the onions and butter and cook 15 minutes, until onions are browning. Sprinkle with flour and cook, stirring, until flour has taken some colour.
    2. Add the hot stock and bay leaf and simmer 15 minutes. Add salt and pepper to taste.
    3. Sprinkle the cheese over the bread slices on a baking tray. Cook under the grill until cheese has started to brown.
    4. Serve the soup in 4 bowls, and top with 2 slices baguette each.
