    Serves: 4 

    • 2 tablespoons extra virgin olive oil
    • 2 leeks, white part only, sliced
    • 2 medium potatoes, peeled and diced
    • 600ml vegetable stock
    • 100ml cream
    • salt and pepper, to taste
    • fresh parsley, to garnish

    1. Heat the olive oil in a saucepan. Saute the leeks over low heat for a few minutes.
    2. Add the potatoes and vegetables tock. Simmer over low heat 20 minutes.
    3. When the potatoes are well cooked, puree the soup with an immersion blender.
    4. Add the cream and salt and pepper to taste, stir and simmer another five minutes.
    5. Serve, garnished with parsley.
