Healthy Tabouli Salad

    I love to make this recipe to have as a side to BBQ's. It has a nice tart element to it which matches fatty meats really well.

    Serves: 8 

    • 1 cup burghul
    • 4 tomatoes, cored and diced
    • 1/2 cucumber, seeded and diced
    • 2 cloves garlic, finely diced
    • 1 cup finely diced parsley
    • 1/4 cup finely diced mint leaves, optional
    • 1 teaspoon sea salt
    • 1/2 cup lemon juice
    • 1/2 cup extra virgin olive oil

    1. Place burghul in bowl and cover with 2 cups boiling water. Soak for 30 minutes then drain and squeeze out excess water.
    2. In a bowl, combine the burghul, tomatoes, cucumber, garlic, parsley, mint, salt, lemon juice and olive oil. Toss to combine well.
    3. Refrigerate for at least 2 hours before serving. Mix again before serving.
