Moist and Fruity Pumpkin Scones

    These pumpkin scones are just as delicious as they sound. Enjoy for afternoon tea or coffee while they are still warm from the oven.

    Makes: 12 scones

    • 200g cooked, mashed pumpkin
    • 2 tablespoons butter, melted
    • 1 tablespoon honey
    • 1 teaspoon ground cinnamon
    • 1 handful currants or sultanas
    • 250g wholemeal self-raising flour
    • milk, as needed

    1. Preheat oven to 200 degrees C. Grease a baking tray.
    2. In a bowl, mix pumpkin, butter, honey, cinnamon and currants or sultanas. Mix in the flour and add enough milk to bring to a soft dough consistency. Knead lightly and roll out then cut into 12-15 scones.
    3. Place on the baking tray and bake 15 minutes. Serve hot or cold.
