Coffee Rice and Pumpkin Salad

    It sounds a little strange but you have to try cooking rice in coffee. This salad is seriously delicious.

    Serves: 6 

    • 250g long grain rice
    • 3 cups sweet, freshly brewed coffee
    • 3 tablespoons white wine vinegar
    • 4 tablespoons vegetable oil
    • salt and pepper, to taste
    • juice of 1 lemon
    • 350g pickled pumpkin, cubed
    • 150g pickled ginger in syrup, diced
    • 1 small head iceberg lettuce, torn up

    1. In a saucepan, cook the rice in the coffee until done. Drain and let cool.
    2. In a bowl, combine the vinegar, oil, salt, pepper and lemon juice.
    3. In a salad bowl combine rice, lettuce, pumpkin and ginger. Pour over the dressing and toss. Let sit for 15 minutes before serving.
