The best way to cook thick snapper steaks, quickly barbecued and served with a basic lemon and olive oil sauce. Serve with green salad and bread for the perfect summer lunch.

Serves: 4 

  • 2 tablespoons lemon juice
  • salt, to taste
  • 1 teaspoon dried oregano
  • 1/4 cup olive oil
  • black pepper, to taste
  • 1 kg snapper steaks

  1. Preheat the barbecue to high and oil the grill plate.
  2. In a measuring jug, combine the lemon juice, salt and oregano. Gradually add the oil while whisking with a fork. Season with plenty of freshly ground pepper.
  3. Place the fish steaks on the bbq and cook about 1 minute a side, close to the heat. You may need a little longer, but don't overcook!
  4. Transfer the steaks to a warmed plate and pour the lemon sauce over. Enjoy!
