The best way to cook thick snapper steaks, quickly barbecued and served with a basic lemon and olive oil sauce. Serve with green salad and bread for the perfect summer lunch.
Preheat the barbecue to high and oil the grill plate.
In a measuring jug, combine the lemon juice, salt and oregano. Gradually add the oil while whisking with a fork. Season with plenty of freshly ground pepper.
Place the fish steaks on the bbq and cook about 1 minute a side, close to the heat. You may need a little longer, but don't overcook!
Transfer the steaks to a warmed plate and pour the lemon sauce over. Enjoy!
