Stuffed Potatoes

    So simple but so tasty this recipe can be used as a side dish or an entree. Baked potatoes are stuffed with onion and bacon before being sprinkled with your favourite cheese.

    Ingredients
    Serves: 4 

    • Baked Potatoes
    • 4 potatoes
    • olive oil or butter, as required
    • Stuffing
    • 2 rashers bacon
    • 1/2 brown onion, finely diced
    • 1/2 cup grated cheese

    Directions

    1. Baked Potatoes:Peel the potatoes then cut in half.
    2. Preheat your air fryer or oven to 180 degrees C.
    3. Brush the potatoes gently with the oil then cook them in the preheated air fryer for 10 minutes.
    4. Brush again with the oil then continue to cook for another 10 minutes.
    5. Brush again with the oil then continue to cook for another 10 minutes or until the potatoes are cooked through.
    6. Stuffing: Cut the baked potatoes in half and remove the cooked potato.
    7. In a frying pan over medium heat gently saute the bacon and onion. When cooked stir through the bacon and onion. Remove from the heat.
    8. Stir through 1/2 the cheese then fill (stuff) the potatoes. Sprinkle the remaining Cheese over the top to the stuffed potatoes.
    9. Return the stuffed potatoes to the air fryer or oven and cook for 6 minutes to melt the cheese and re-heat through.

    Optional Garnish

    You can cook an extra amount of bacon and onion then remove this before combining with the potato. This can then be used to garnish the potato along with parsley.

    recipe contains conflicting instructions. states to peel and halve the potatoes in the list of ingredients. Later, it states to halve the potatoes after they have been cooked in the fryer, then it states to stuff the "skins", yet the instructions previously stated to remove the skin. this is merely a review of the posted recipe, I did not make the item  -  27 Mar 2018  (Review from Allrecipes USA and Canada)

    These turned out good but my husband and I both agree that they needed some kind of cream in the stuffing to make them smooth and creamy like twice baked potatoes typically are. A couple other things I will mention is that you need to plan on 20 extra minutes for your airfryer to heat to 350. Lastly, the ingredient list calls for you to peel and slice your potatoes in half.
