Baked Whole Snapper

    A whole snapper is simply baked with onions, lemon, herbs and dry white wine. Easy and full of delicate flavour.

    Serves: 4 

    • 1 whole snapper, about 2kg, cleaned
    • salt and freshly ground pepper, to taste
    • 1/4 cup olive oil
    • 4 slices lemon
    • 1 sprig fresh thyme, or 1/2 teaspoon dried
    • 1 small onion, sliced
    • 1 cloves garlic, minced
    • 1 teaspoon dried oregano
    • 2/3 cup dry white wine

    1. Preheat oven to 200 degrees C.
    2. Sprinkle the snapper inside and out with salt and pepper. Place in a roasting tin and pour over the olive oil. Arrange lemon slices on top and top with thyme.
    3. Distribute the onion rings, garlic and oregano around the fish.
    4. Place in the oven and bake 10 minutes. Add the wine to the roasting tin and continue baking, basting occasionally, 30 more minutes.
