Green Tomato Pickle

    My favourite childhood pickle recipe and a great way to use up all the end of season green tomatoes when you pull up the plants.

    Serves: 10 

    • 3 kg green tomatoes
    • 4 tablespoons cooking salt
    • 1 1/2 teaspoons cloves
    • 2 teaspoons peppercorns
    • 2 teaspoons mustard seeds
    • 6 bay leaves
    • 2 teaspoons fresh ginger or 1 teaspoon dry ginger
    • 1 teaspoon pimento (allspice)
    • 1 cinnamon stick
    • 4 cups (1 litre) malt vinegar
    • 2 large onions, finely sliced
    • 250g brown sugar
    • 125g raisins

    1. Slice green tomatoes into a non-metallic dish, sprinkle with salt and leave overnight. Drain off salty liquid before using green tomatoes.
    2. Mix together all spices, add half the vinegar and bring to the boil. Boil for 2 minutes. Add rest of vinegar and boil for another 3 minutes.
    3. Strain and retain the spiced vinegar. Add onion, brown sugar, raisins and strained green tomato. Simmer for 30 minutes or until tender.
    4. Let cool and put in sterilized jars. Cover jars with plastic or paper before putting on metal lids.
