French Onion Soup au Gratin

    On a cold evening you will find there is nothing better than a hot bowl of French onion soup with melted cheese.

    Serves: 4 

    • 1 tablespoon butter
    • 2 tablespoons olive oil
    • 300g onions, halved and sliced
    • 2 tablespoons flour
    • 1/2 cup dry white wine
    • 4 cups beef stock
    • salt and pepper, to taste
    • 4 slices white bread
    • 120g grated Gruyere or other cheese

    1. In a large saucepan, combine butter and oil over medium heat. Add the onions, cover and cook 10-12 minutes.
    2. Reduce heat, uncover and fry the onions in the pot 15-30 minutes until golden brown, stirring often. Sprinkle the flour over the onions and stir well. Pour in the wine and boil 1 minute.
    3. Meanwhile, heat the beef stock. Pour the hot stock into the onions and simmer over low heat 15 minutes, stirring occasionally. Season with salt and pepper.
    4. Set the oven to high heat. Toast the slices of bread. Ladle the soup into bowls, top with bread slices and grated cheese, then bake until the cheese melts.
