Asparagus and Spinach Soup

    This may well be the perfect spring soup - asparagus, spinach and chives, bright green and delicious!

    Serves: 8 

    • 30g butter
    • 1 kg asparagus, trimmed and diced
    • 1 floury potato, peeled and diced
    • 1 bunch parsley, chopped
    • 5 cups (1 1/4 litres) chicken stock
    • 1 bunch fresh spinach, chopped
    • 1 bunch chives, chopped
    • creme fraiche or sour cream, as needed
    • salt and pepper, to taste
    • white wine vinegar, to taste

    1. Heat the butter in a large saucepan. Add the asparagus and potato and fry 3 minutes, stirring. Add the parsley and fry 2 more minutes.
    2. Add the stock and bring to a simmer. Simmer, uncovered, 15 minutes. Roughly puree the soup with a hand blender.
    3. Add the spinach and chives and bring to the boil. Season to taste with creme fraiche, salt, pepper and a dash of vinegar.
