Easy Zucchini Soup

This soup is the best and easiest way to use up the zucchini that are choking the garden! Carrots give it a warm colour and flavour.

Ingredients
Serves: 6
- 1 tablespoon butter
- 1 kg zucchini, diced
- 250g potatoes, peeled and diced
- 250g carrots, peeled and diced
- 2 cups (500g) vegetable stock
- salt and pepper, to taste
- cream, to taste
- dash white wine vinegar

- Melt the butter in a saucepan and saute the vegetables until just getting tender. Add stock and simmer 20 minutes until soft.
- Puree the soup with a hand blender. Season with salt, pepper, cream and vinegar.
