Easy Zucchini Soup

    This soup is the best and easiest way to use up the zucchini that are choking the garden! Carrots give it a warm colour and flavour.

    Serves: 6 

    • 1 tablespoon butter
    • 1 kg zucchini, diced
    • 250g potatoes, peeled and diced
    • 250g carrots, peeled and diced
    • 2 cups (500g) vegetable stock
    • salt and pepper, to taste
    • cream, to taste
    • dash white wine vinegar

    1. Melt the butter in a saucepan and saute the vegetables until just getting tender. Add stock and simmer 20 minutes until soft.
    2. Puree the soup with a hand blender. Season with salt, pepper, cream and vinegar.
