Broccoli soup is very delicious and when you add parsley you won't believe how bright and healthy tasting it is!
2 cups (500ml) vegetable stock
450g broccoli, cut into florets and stalk peeled and diced
1 bunch parsley, chopped
salt and freshly ground black pepper, to taste
1 tablespoon lemon juice
150ml sour cream
- Heat the stock in a saucepan, add the broccoli and parsley. Bring to a simmer and cook 10 minutes. Set a few broccoli florets aside for garnish and puree the soup with a hand blender.
- Season with salt, pepper and lemon juice. Stir in the sour cream and heat through again, but do not boil. Serve in bowls, garnished with broccoli florets.
