Potato and Leek Soup with Tomatoes

    I love potato and leek soup but there aren't that many variations. I created this one with diced tomatoes and everyone loves it!

    Serves: 4 

    • 1 tablespoon olive oil
    • 1 tablespoon butter
    • 4 medium waxy potatoes, peeled and diced
    • 2 leeks (white part only), sliced
    • 4 cups (1 litre) chicken stock
    • 3 large ripe tomatoes
    • salt and black pepper, to taste
    • dollop of creme fraiche or sour cream

    1. Heat olive oil and butter in a large saucepan and saute the potatoes and leeks. Pour in the stock and cover. Simmer 20 minutes or until the vegetables are soft.
    2. Peel and finely dice the tomatoes. Puree the soup and stir in the tomatoes. Season with salt and pepper and stir in the creme fraiche or sour cream. Serve.
