2 cucumbers, peeled and diced
1 stalk celery, diced
2 green capsicums, diced
1 clove garlic, diced
1/2 onion, diced
2 sprigs fresh coriander
cold water, as needed
1 tablespoon extra virgin olive oil
8 cherry tomatoes, quartered

Combine the cucumber, celery and capsicum in a blender. Scoop out the flesh of the avocado and add to blender. Add garlic, onion and coriander then puree until smooth. Add as much cold water as needed to reach desired consistency.
Chill the soup in a closed container in the fridge for 1 hour. When serving, stir in the olive oil and garnish with tomatoes.
