Pumpkin, Potato and Carrot Soup

    In the cold weather there is nothing better than a little vegetable soup. This is a very easy and practical recipe.

    Ingredients
    Serves: 4 

    • 4 cups (1 litre) beef stock
    • 200g pumpkin, diced
    • 200g carrots, sliced
    • 200g potatoes, peeled and sliced
    • salt and black pepper, to taste

    Preparation:10min  ›  Cook:30min  ›  Ready in:40min 

    1. In a deep saucepan, combine all the ingredients and simmer 30 minutes until the vegetables are cooked. Let cool.
    2. When cool, blend the soup and season with salt and pepper. Reheat and serve.
