Onion Soup Gratin

    French onion soup is a recipe that never goes out of style. I like to place the bowls on a baking tray in case the cheese drips over the edge while baking.

    Serves: 4 

    • 200g onions, thinly sliced
    • 4 tablespoons butter
    • 1 tablespoon plain flour
    • 4 cups chicken stock
    • salt and black pepper, to taste
    • 3 tablespoons fresh cream
    • 1 cup Swiss cheese, grated
    • 4 slices stale Italian bread

    1. Saute the onions in the butter over low heat until they brown without burning.
    2. Add the flour, stirring constantly, and cook for a few minutes. Gradually add the stock, stirring constantly. Season to taste.
    3. Cook over low heat 30 more minutes, stirring occasionally. Let the soup reduce to your desired thickness. Meanwhile, preheat the oven to 180 degrees C.
    4. Remove the soup from the heat and gradually drizzle in the cream, stirring. Distribute into 4 bowls, top each with a slice of bread and sprinkle with cheese. Place bowls on a baking tray.
    5. Bake until cheese is melted. Serve immediately.
