This is a very easy cabbage and potato soup which is ideal for a rainy day. If you are not vegetarian you can also add a little smoked sausage which goes well with the cabbage.
olive oil, as needed
6 cloves garlic, diced
4 large potatoes, peeled and diced
5 cups vegetable stock
1/2 cabbage, thinly sliced
salt and pepper, to taste
- Heat a little oil in a large saucepan and brown the garlic. Add the potatoes and cook 2 minutes, stirring well.
- Add stock and simmer 1/2 hour, or until potatoes are very tender. Blend the soup with a stick blender.
- Add the cabbage and simmer 2 minutes. Add more olive oil, to taste. Season with salt and pepper and serve.
