Broccoli and Cauliflower Soup

    Very nutritious and low in calories, this soup is ideal for those on a diet. You can leave out the sausage meat to make it vegetarian if you like.

    Serves: 4 

    • 250g broccoli, diced
    • 250g cauliflower, diced
    • 4 cups (1 litre) vegetable stock
    • 2 tablespoons diced onion
    • 1 clove garlic, crushed
    • 50g sausage meat
    • salt and pepper, to taste

    1. In a saucepan, simmer the broccoli and cauliflower in the stock until soft, about 25 minutes.
    2. Add the onion, garlic and sausage meat then simmer 10 more minutes. Add salt and pepper to taste.
