Carrot Soup with Ginger

    When the weather is cold there is nothing like a rich carrot and sweet potato soup with a touch of ginger. This is a thick soup.

    Serves: 6 

    • 3 tablespoons olive oil
    • 1 tablespoon butter
    • 1 onion, peeled and diced
    • 1 kg carrots, peeled and diced
    • 2 sweet potatoes, peeled and diced
    • 2 stalks celery, diced
    • 3cm fresh ginger, peeled and minced
    • 8 cups (2 litres) water
    • 1 vegetables stock cube
    • salt and pepper, to taste

    1. In a heavy bottomed saucepan, heat oil and butter, add onion and cook until browned. Add carrots and sweet potatoes. Cook 4 minutes, then add celery and ginger. Cook 1 more minute.
    2. Add water and stock cube. Cover and simmer 30-40 minutes until vegetables are tender. Season with salt and pepper to taste.
    3. Blend soup, and reheat before serving.
