Easy Cream of Broccoli Soup

    Sometimes I like to add a little cream to this broccoli soup at the very end but it is very light and nutritious without.

    Serves: 6 

    • 1 tablespoon butter
    • 1 tablespoon oil
    • 1 large onion, diced
    • 2 spring onions, sliced
    • 8 cups broccoli, diced (including stem)
    • 6 cups chicken stock
    • 1 tablespoon nutmeg
    • 1 tablespoon tarragon
    • salt and pepper, to taste
    • 1 teaspoon celery salt (optional)

    1. Melt the butter and oil in a saucepan over low heat. Add onion and cook until soft. Add the white part of the spring onions and saute 1 minute.
    2. Add the broccoli and green parts of the spring onions. Saute 2 minutes. Add stock and all the seasonings, bring to a low simmer, cover and cook 1 hour.
    3. Blend the soup until smooth. Test for salt and pepper.
