Here's an original and tasty side dish for your Christmas meal or any other occasion where you want something a bit special.
1 tablespoon olive oil
600g brown mushrooms, sliced
3 cloves garlic, diced
1 teaspoon dried basil
salt and freshly ground pepper, to taste
600ml champagne or sparkling wine
chopped parsley, to garnish
- Heat the oil in a frypan and saute mushrooms with garlic, basil, salt and pepper for 10 minutes, stirring frequently.
- Add champagne and simmer until wine has almost completely evaporated. Taste and add more salt and pepper if needed. Add the parsley and serve.
