Salmon Caviar Cocktail

    This is an easy and elegant appetiser, perfect for a fancy party or Christmas. Serve with toasted bread for dipping if you like.

    Serves: 6 

    • 4 hard boiled eggs, mashed with a fork
    • 2 tablespoons mayonnaise
    • 1 teaspoon capers, crushed
    • salt and freshly ground pepper, to taste
    • 4 slices smoked salmon, cut into thin strips
    • 6 teaspoons salmon caviar
    • chives, to garnish

    1. Mix the eggs with mayonnaise and crushed capers.
    2. Divide the mixture between six serving glasses. Top with smoked salmon, salmon caviar and a sprinkling of chives.
