Preheat oven to 170 degrees C and line a loaf tin with baking paper.
Melt the butter in a saucepan, add the honey and sugar and stir until dissolved. Transfer to a mixing bowl and let cool.
Add the sifted flour, baking powder and bicarb soda. Mix well.
Add remaining ingredients and mix well. Pour into loaf tin. Bake 45 minutes, reduce heat to 150 degrees C and bake 15-30 more minutes or until it tests done. Let cool on a rack, then let stand in a cool dry area 24 hours before serving.
