Roast Turkey with Sausage Stuffing

    Turkey with a bit of an unusual stuffing of pork sausage meat, mushrooms, garlic and herbes de Provence. The perfect thing for a delicious Christmas.

    Makes: 1 roast turkey

    • 1 turkey, about 3 kg
    • 250g pork sausages, casings removed
    • 250g mushrooms, diced
    • 1 onion, diced
    • 2 cloves garlic, crushed
    • 30g butter, softened
    • herbes de Provence, to taste
    • salt and pepper, to taste
    • 4 tablespoons olive oil

    1. Preheat oven to 200 degrees C. In a bowl combine the sausage meat, mushrooms, onion, garlic, butter, herbs to taste, salt and pepper and 2 tablespoons olive oil. Stuff turkey with the mixture. Brush the turkey with the remaining 2 tablespoons oil and sprinkle with some more herbs.
    2. Place the turkey on a rack in a roasting tin. Roast 2 1/2 hours, covering with foil as soon as it browns a bit. Remove the foil for the last 30 minutes of roasting.
