White Christmas

    I've never really liked the taste of copha, or glace cherries, so I came up with this white Christmas recipe. Yum!

    Serves: 6 

    • 500g white chocolate melts
    • 2 tablespoons light thickened cream
    • 1/2 teaspoon vanilla extract
    • 1 1/2 cups rice bubbles
    • 1 cup almonds, chopped
    • 1 cup mixed dried tropical fruit (pineapple, mango, paw paw)
    • 1 cup shredded coconut

    Preparation:15min  ›  Extra time:1hour chilling  ›  Ready in:1hour15min 

    1. Line a loaf tin or a small square baking tin with baking paper.
    2. Place the chocolate in a metal bowl over simmering water, making sure the water doesn't touch the bottom of the bowl. Stir while melting until just smooth.
    3. Quickly add the rest of the ingredients and mix through. Press into the prepared tin and smooth down. Refrigerate one hour before cutting into squares.
