I've never really liked the taste of copha, or glace cherries, so I came up with this white Christmas recipe. Yum!
500g white chocolate melts
2 tablespoons light thickened cream
1/2 teaspoon vanilla extract
1 1/2 cups rice bubbles
1 cup almonds, chopped
1 cup mixed dried tropical fruit (pineapple, mango, paw paw)
1 cup shredded coconut
Extra time:1hour chilling ›
- Line a loaf tin or a small square baking tin with baking paper.
- Place the chocolate in a metal bowl over simmering water, making sure the water doesn't touch the bottom of the bowl. Stir while melting until just smooth.
- Quickly add the rest of the ingredients and mix through. Press into the prepared tin and smooth down. Refrigerate one hour before cutting into squares.
