I never seem to get time to make roast lamb very often any more, so it has become a Christmas tradition in our family. The recipe is easy and creates a wonderful main meat.
1 bone in leg of lamb
1 tablespoon pepper
2 tablespoons sea salt
1/2 tablespoon garlic powder
1/2 tablespoon mint
1/3 cup of oil

- Trim any excessive fat from the leg of lamb and find a plastic zip-lock bag it will fit in.
- Combine the pepper, salt, garlic powder, mint and oil. rub into the lamb then place the lamb and any remaining oil-herb mix into the bag. Refrigerate overnight.
- Preheat the oven to 220 degrees C.
- Place the lamb in a roasting tray and roast for 30 minutes. Reduce the oven temperature to 160 degrees C then cook for an additional 45 minutes or until the lamb is cooked to your preference.
