Christmas Lamb

    I never seem to get time to make roast lamb very often any more, so it has become a Christmas tradition in our family. The recipe is easy and creates a wonderful main meat.

    Serves: 6 

    • 1 bone in leg of lamb
    • 1 tablespoon pepper
    • 2 tablespoons sea salt
    • 1/2 tablespoon garlic powder
    • 1/2 tablespoon mint
    • 1/3 cup of oil

    1. Trim any excessive fat from the leg of lamb and find a plastic zip-lock bag it will fit in.
    2. Combine the pepper, salt, garlic powder, mint and oil. rub into the lamb then place the lamb and any remaining oil-herb mix into the bag. Refrigerate overnight.
    3. Preheat the oven to 220 degrees C.
    4. Place the lamb in a roasting tray and roast for 30 minutes. Reduce the oven temperature to 160 degrees C then cook for an additional 45 minutes or until the lamb is cooked to your preference.
