Christmas Fruit Mince

    This easy fruit mince doesn't even require cooking and is perfect for Christmas tarts and pies. It will keep two weeks in the fridge.

    Serves: 8 

    • 2 apples, peeled, cored and grated
    • 1 1/3 cups raisins
    • 120g dried apricots, diced
    • 120g prunes, diced
    • 220g green grapes, halved
    • 50g almonds, diced
    • zest of 1 lemon
    • 2 tablespoons lemon juice
    • 2 tablespoons brandy or port
    • 1/4 teaspoon mixed spice
    • 1/2 cup brown sugar
    • 2 tablespoons butter, melted

    1. Combine all ingredients in a bowl and mix well. Use in your favourite tart or pie recipe. Alternately, pack the fruit mince into jars and seal tightly. It will now keep in the fridge for two weeks and only get better.
