Washing the dried fruit before using it removes quite a lot of unnecessary sugar which makes this panettone lower in calories though still big in flavour.
Makes: 2 panettone
250g mixed candied fruits
1 kg plain flour
100ml warm water
200g light unsalted butter, softened
8 egg yolks
2 teaspoons panettone or vanilla essence
5 tablespoons powdered sweetener for cooking
1 teaspoon salt
1 cup milk

- Wash the candied fruits and raisins to remove excess sugar and let dry.
- In a mixing bowl, combine 100g flour, the yeast and water and stir well. Let rest 10 minutes.
- Mix in the butter, egg yolks, vanilla, sweetener and salt, then stir in the remaining flour and milk alternately to form a dough.
- Pour batter into two paper panettone molds to half full. Cover with a cloth and let rise until doubled, about 40 minutes. Meanwhile, preheat oven to 150 degrees C.
- Bake 45-50 minutes.
