Washing the dried fruit before using it removes quite a lot of unnecessary sugar which makes this panettone lower in calories though still big in flavour.


Makes: 2 panettone

  • 250g mixed candied fruits
  • 150g raisins
  • 1 kg plain flour
  • 60g yeast
  • 100ml warm water
  • 200g light unsalted butter, softened
  • 8 egg yolks
  • 2 teaspoons panettone or vanilla essence
  • 5 tablespoons powdered sweetener for cooking
  • 1 teaspoon salt
  • 1 cup milk

  1. Wash the candied fruits and raisins to remove excess sugar and let dry.
  2. In a mixing bowl, combine 100g flour, the yeast and water and stir well. Let rest 10 minutes.
  3. Mix in the butter, egg yolks, vanilla, sweetener and salt, then stir in the remaining flour and milk alternately to form a dough.
  4. Pour batter into two paper panettone molds to half full. Cover with a cloth and let rise until doubled, about 40 minutes. Meanwhile, preheat oven to 150 degrees C.
  5. Bake 45-50 minutes.
