This is a very simple Christmas cake to make which requires no special techniques or equipment.


Makes: 1 cake

  • 2 cups plain flour
  • 3 teaspoons baking powder
  • 3/4 cup sugar
  • 1 cup (250ml) milk
  • 1 egg
  • 1 cup walnuts, finely diced
  • butter, for greasing
  • flour, for dusting
  • Icing
  • 1/2 cup icing sugar
  • water, as needed

  1. Preheat oven to 180 degrees C.
  2. Sift the flour and baking powder together. In a bowl combine the flour, sugar, milk, egg and walnuts. Mix well.
  3. Butter and flour a loaf tin. Pour in the batter and bake until lightly golden, about 40 minutes.
  4. To make the icing, combine the icing sugar with just enough water to make it smooth and thick.
  5. Remove the cake from the tin and let cool. Drizzle over the icing.
