Lemon Lime No Bake Cheesecake

An easy no bake dessert that takes about 10 minutes to make and a few hours to set. Nice and light on a hot night.

Makes: 1 cheesecake

  • 1 packet milk arrowroot biscuits, crushed
  • 125g butter, melted
  • 250ml thickened cream, whipped
  • 250g cream cheese, softened
  • 1 can condensed milk
  • 1/6 cup lemon juice
  • 1/6 cup lime juice
  • (or just a third of a cup of either juice)

Preparation:10min  ›  Extra time:4hours chilling  ›  Ready in:4hours10min 

  1. Line bottom of 22 cm springform tin with baking paper.
  2. Mix crushed biscuits and butter together. Press biscuits into bottom and halfway up the sides of the springform tin. Refrigerate while making filling.
  3. With an electric mixer, beat whipped cream, cream cheese and condensed milk together until smooth.
  4. Add lemon and lime juices and beat well. Pour into biscuit crust, smoothing top.
  5. Refrigerate until set, 3 - 4 hours. Decorate with whipped cream and strawberries.
