In Russia this salad is traditionally served at Christmas and New Years. It goes great with roasted meats or at a barbecue.


Serves: 6 

  • 3 potatoes
  • 2 carrots
  • 2 eggs
  • 200g stuffed olives
  • 50g roasted red peppers, cut into strips
  • 1 (215g) tin green beans
  • 3 tablespoons gherkin relish
  • 2-3 tins tuna in olive oil
  • 2 cups mayonnaise (or to taste)
  • 4 tablespoons vinegar, or to taste
  • salt, to taste

  1. Cook the potatoes in boiling salted water 10 minutes. Add the carrots and cook 10 more minutes. Add the eggs and let cook 10 more minutes.
  2. Drain and let cool. Peel the potatoes and cut into cubes. Slice the carrots and peel the eggs.
  3. In a bowl, combine potato, carrots, diced eggs, olives, roasted peppers, beans and relish. Mix gently. Add the tuna and mix once again.
  4. Add the mayonnaise and stir gently. Add vinegar to taste and salt. Refrigerate until serving.
