300ml thickened cream
3 tablespoons sugar
3 kiwifruit, peeled and diced
1 kiwifruit, sliced, to garnish

In a bowl, beat the cream with the sugar just until stiff peaks form, but not too much.
Process the kiwifruit in a food processor to a thick puree.
Put one tablespoon of kiwifruit puree at the bottom of four serving glasses or champagne flutes. Add a dollop of cream then repeat the layers, finished with cream. Garnish with a slice of kiwifruit and refrigerate until ready to serve.
