    This is a simple sweet and sour sauce which is no trouble to make. It is excellent with baked ham or roast pork.

    Serves: 6 

    • 3 cups (750ml) water
    • 1 kg onion shallots, finely diced
    • 200g large seedless raisins
    • 250g sugar
    • 1/2 cup white wine vinegar
    • 2 tablespoons mustard
    • 3 tablespoons tomato paste
    • 1 bay leaf
    • salt and pepper, to taste

    1. Combine all ingredients in a saucepan and place over very low heat.
    2. Simmer very gently for 2 - 2 1/2 hours, or until reduced by half.
