    Have you got left over pumpkin? No problem. Try these spicy pumpkin cookies. Delish.

    Makes: 12 biscuits

    • 225g butter, softened
    • 1 cup sugar
    • 1/2 cup brown sugar, packed
    • 1 egg
    • 2 teaspoons vanilla
    • 3/4 cup cooked and pureed pumpkin
    • 3 3/4 cups plain flour
    • 1 1/2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1 teaspoon cinnamon
    • 1/2 teaspoon nutmeg
    • 1/2 teaspoon mixed spice
    • 1/2 teaspoon ground ginger
    • Cinnamon Sugar
    • 2 heaped tablespoon sugar
    • 2 teaspoons cinnamon

    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Preheat the oven to 180 degrees C. Line a tray with baking paper.
    2. With an electric mixer cream the butter and sugars. Add the egg, vanilla and pumpkin.
    3. Add all the dry ingredients in 2 batches, mixing until well combined.
    4. Roll into balls (about a heaped teaspoonful) then roll in cinnamon sugar.
    5. Place 12 to a tray and flatten slightly with a fork.
    6. Cook 15 minutes in the preheated oven or until lightly brown.


    This makes a lot. I made 4 dozen then froze the rest of the dough.
