Ginger Crunch Biscuits

    Serves: 6 

    • 250g butter, softened
    • 1/2 cup sugar
    • 1/2 tin condensed milk
    • 2 1/2 cups self raising flour
    • 1/4 cup golden syrup
    • 2 - 3 teaspoons ground ginger, to taste
    • 3/4 teaspoon ground cinnamon
    • extra sugar

    Preparation:15min  ›  Cook:10min  ›  Extra time:5min cooling  ›  Ready in:30min 

    1. Preheat the oven to 180 degrees C. Line 2 baking trays with baking paper.
    2. With an electric mixer, cream butter and sugar. Add the condensed milk then mix until well combined.
    3. Stir in the flour, golden syrup, ginger and cinnamon.
    4. Roll into walnut size balls then flatten slightly with a fork dipped in flour. Sprinkle with some extra sugar.
    5. Cook for approximately 10 minutes or until light brown. Cool 5 minutes on tray then move to a wire rack.
