Put all the ingredients in a mixing bowl, along with the butter, and mix well.
Melt some coconut oil (or butter) in a frypan and and 4 blobs of batter then lightly press them to create disks.
Fry for around 3-4 minutes on each side.
Makes 4 pikelet sized biscuits.
** I haven't noticed a difference in taste between using butter or coconut oil. I love them both.
**They are quite spongey in texture, yet still light and moist.
**The coconut flavour is pretty much non-existent.
