    These taste like lemon cheesecake donuts. Yes...now they exist!! And they take less than 10 minutes to make. Some recipes are just genius and this is one of them!

    Ingredients
    Makes: 4 biscuits

    • 6 tablespoons melted butter or coconut oil
    • 2 eggs
    • 4 tablespoons coconut flour
    • 1 scoop (32g) vanilla protein powder
    • dash of vanilla essence/extract
    • 2 teaspoons natvia (or stevia to taste) + Extra for sprinkling
    • grated rind of 1/2 lemon
    • juice of 1/2 lemon
    • coconut oil, for frying

    Directions
    Preparation:10min  ›  Cook:8min  ›  Ready in:18min 

    1. Melt the butter.
    2. Put all the ingredients in a mixing bowl, along with the butter, and mix well.
    3. Melt some coconut oil (or butter) in a frypan and and 4 blobs of batter then lightly press them to create disks.
    4. Fry for around 3-4 minutes on each side.

    Tip

    Makes 4 pikelet sized biscuits. ** I haven't noticed a difference in taste between using butter or coconut oil. I love them both. **They are quite spongey in texture, yet still light and moist. **The coconut flavour is pretty much non-existent.
