Low Carb Grain Free Cheesy Black Pepper Crackers

    Delicious on their own or in place of cheese flavoured corn chips. Perfect with salsa.

    Serves: 6 

    • 2 egg whites
    • 1/2 cup finely grated Tasty cheese
    • 1/2 - 3/4 cup almond flour
    • cracked sea salt
    • cracked black pepper

    1. Preheat oven to 200 degrees C. Place the 2 egg whites and cheese in a mixing bowl.
    2. Prepare a baking tray with 2 sheets of baking paper of the same size. Add the majority of the almond flour to the egg white and cheese mixture. Mix it together and place a spoonful between the two baking sheets. Press it flat and lift the top sheet off. If the dough sticks to the top sheet, add more almond flour. Repeat this process until the top sheet peels off clean.
    3. Use a rolling pin to flatten the mixture between the baking paper sheets. Fold the ends of the bottom sheet on top of the dough to get nice clean straight lines. This helps to make your dough square. Roll it out as thin as it allows. The cheese will melt and fill any gaps.
    4. Sprinkle the dough with cracked sea salt and black pepper.
    5. Place in the oven and check after 30 minutes. Half way through, take it out and score the dough before it becomes crisp. The ends will brown first. Break it apart and spread the crisps around so that the middle crisps are towards the back.
    6. Scoff 'em.


    Make tortilla chips by scoring the dough into triangles. Add the salt and black pepper during mixing. Also, try adding a pinch of turmeric for a golden yellow colour (it's also a superfood).
